Healthy egg less banana dates cake/bread with almond and sultana




Ingredients:

1 cup Wheat flour
3/4 cup plain flour (maida)
1 tsp Baking powder
1 tsp Baking soda/fruit salt (i used eno)
pinch of Salt
10-15 dates
1 cup of warm milk
½ cup of sugar
2 ripe/overripe Bananas
5-7 tbs of cooking oil/vegetable oil/olive oil
2 tbsp each Almonds and Raisins

Method:


Warm about 1 cup of milk, wash the dates and soak them in warm milk for about 2-3 hrs. It would be better if dates are pitted. Then make a smooth pulp in a food processor.
Now mix in the two bananas, sugar and oil. And process it well in food processor.

Preheat oven at 180 deg C.

Mix in dry ingredients –wheat flour, plain flour, eno, baking powder in big mixing bowl.
Slowly start mixing the dates+banana+sugar+oil puree with the dry ingredients. The mix should not be very runny. if it is very dry, add some more warm milk.Add the raisin and half of the crushed almonds.

Prepare the cake mould by greasing it with oil and then pour the batter. Sprinkle the remaining crushed almond  and raisins on top.

Bake for about 40-45 mints at 180 deg C or till a toothpick comes out clean when inserted into the loaf.
Serve warm or cold. Enjoy!
